Would you want to have to make a meal right now made solely out of what you currently have stocked in your pantry and refrigerator? Could you?
The above picture is of the lunch I made today for my husband and myself, made entirely out of what I already had on hand. It consists of pasta, black beans, corn, onion, garlic, tomatoes, and chipotles and cost approximately $2.26. That actually is kind of on the expensive side of things, but the pasta is a specialty pasta from the local farmer's market and was far and away the most expensive part of lunch. I could have just as easily used a box of pasta purchased from my local grocery store at 1/4 the cost, but I do try to support local merchants when I can.
While I do not always cook lunch for myself (and/or my husband), I do try to keep a well-stocked pantry which will allow me to throw something together when I need to.
